Pumpkin

Pumpkin is one of our favourite vegetables here at Food For You. Not only is pumpkin delicious in curry, soup, salad and roasted, it's a great source of fibre. Fibre is important to maintain digestive health and acts as a slow release energy source to keep your body fuelled for the whole day. Pumpkin also contains potassium, antioxidants and is high in both vitamin C and beta-carotene a powerful combination which helps strengthen your immune system and delay the ageing process. Pumpkin also contains other essential nutrients like vitamins A and E, riboflavin, and potassium. These nutrients support heart health, red blood cell production, and have been shown to reduce the risks of some cancers, stroke and diabetes type 2 in recent studies. It is rich in vitamins and minerals but low in calories. Pumpkin really is packed full of nutrients.

Carrots

Carrot is another vegetable rich in both vitamin C and beta-carotene. Carrots are well known to help prevent vision loss and degeneration.  Carrots have been shown to hold anti-cancer effects because they are high in antioxidant which aids in reducing free radicals in the body. The presence of potassium and its balance with sodium make carrot a great food to protect from high blood pressure and heart disease.

Sweet Potato

Sweet potatoes are great for weight loss as a replacement for regular potatoes. Not only do sweet potatoes contain high amounts of fibre and potassium which are important for body health and function, they also have fewer calories and more overall nutrients than regular potatoes. Sweet potato also contains essential minerals such as, iron which promotes oxygen circulation in the blood, calcium to support bones structure, chlorine which aids sleep and magnesium which aid enzyme production and function. 25% of the RDI for vitamin B6 is contained in a typical serve of sweet potato. B6 is necessary for digestive health, to reduce the risks of cardiovascular disease, and promote skin health.

Spinach is packed with anti-inflammatory nutrients which combat arthritis pain. And if that wasn't enough spinach also has lutein which studies show reduces the risk of macular degeneration and cataracts.
